3. Honey-mustard chicken, roasted brussels sprouts, roasted potatoes (always my default solo dinner—a glazed chicken thigh + veg)
4. ⭐️ Apricot chicken, buttery rice, roasted veg, & salad for a last minute visit from mom & dad! I use the linked recipe as a guide but add wayyy more dijon and use boneless skinless chicken thighs.
