1. Minimalist Baker’s salmon “sushi” bowls
2. I was going to make enchiladas but ended up riffing on a What’s Gaby Cooking enchilada skillet recipe which is so much easier for a weeknight! No rolling, just layering. It’s not super cute, but the first enchiladas out of the pan are never cute either 🙃
